Nearly every company on the planet has a website with an "About Us" section. Your consultant should have advised you of the company's website address. If not, then a quick web search should identify it in no time at all. Familiarise yourself with the company's history and current events if available. Review the profile of the interviewer, which is normally available for senior personnel. Thoroughly reading the company's website is the very least an interviewer will expect. To make an outstanding impression you should read on.
Every offshore location has a financial services industry regulator - their website is an excellent place to read up on current industry developments and trends. Note questions as you go, but avoid simply making up questions for questions' sake as it's obvious to an experienced interviewer.
Most offshore jurisdictions also have a local business publication with searchable archives. Searching by the firm name and/or industry sector may give you further insight.
Read the job description carefully. For each requirement and duty/responsibility, make notes on your suitability for the role. Have the job description and your notes on hand during the interview.
Every bit as important as acquainting yourself with the job requirements is acquainting yourself with the country that you wish to become your new home.
